Grilled Chicken Tenders with Avocado-Lime Yogurt Sauce
Perfectly seasoned grilled chicken tenders served with a creamy, tangy avocado-lime yogurt sauce. Paired with quinoa and steamed broccoli for a complete, healthy meal.
Ingredients
- 1.5 lbs chicken breast tenders
Seasoning:
- 1 tsp garlic powder or 2 garlic cloves, minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- Avocado-Lime Yogurt Sauce:
- 1 ripe avocado
- 1/2 cup plain Greek yogurt
- Juice of 1 lime
- 1 garlic clove, minced
- 1/4 to 1/2 tsp salt (to taste)
- Sides:
- 2 cups cooked quinoa
- 1 head broccoli, cut into florets
Instructions
- Preheat grill to 375°F.
- Season chicken tenders with garlic powder, salt, and pepper on both sides.
- Grill for 12-15 minutes, flipping once halfway through, until internal temp reaches 165°F.
- While chicken cooks, blend avocado, Greek yogurt, lime juice, minced garlic, and salt until smooth and creamy.
- Steam broccoli florets until fork-tender (about 5-7 minutes).
- Serve grilled chicken tenders over quinoa with steamed broccoli, drizzled or dipped in the avocado-lime sauce.
Notes
The avocado sauce is best made fresh but can be stored in the fridge for up to 2 days with plastic wrap pressed directly onto the surface to prevent browning. This works great on any grill or even in a grill pan indoors.
