Instructions

  1. Preheat grill to 375°F.
  2. Season chicken tenders with garlic powder, salt, and pepper on both sides.
  3. Grill for 12-15 minutes, flipping once halfway through, until internal temp reaches 165°F.
  4. While chicken cooks, blend avocado, Greek yogurt, lime juice, minced garlic, and salt until smooth and creamy.
  5. Steam broccoli florets until fork-tender (about 5-7 minutes).
  6. Serve grilled chicken tenders over quinoa with steamed broccoli, drizzled or dipped in the avocado-lime sauce.

Notes

The avocado sauce is best made fresh but can be stored in the fridge for up to 2 days with plastic wrap pressed directly onto the surface to prevent browning. This works great on any grill or even in a grill pan indoors.
